(Undone) Stuffed Peppers

I have been wanting to try stuffed peppers for awhile now.  Can you believe I've never had them?  That's probably because, if you would have asked me to try one 10 years ago, I would have easily turned my nose up to you and thought "Stuffed Peppers...Seriously?!"  Ah...the joys of aging ;)

While blog surfing a couple of weeks ago, I came across this cutie patootie's "Undone Stuffed Peppers" Recipe.  The ingredients sounded like something I'd always have on hand, and the picture she displays of the bubbly cheese...Oooh..YUM!!!

To start;

You'll Need:
1 lb. turkey burger
2 large green peppers, chopped.
2 Tbsp. garlic, minced.
2 c. cooked white rice
1(24oz.) can spaghetti sauce
1/2 small diced onion
1 1/2 c. Mozzarella cheese (We used Chdr. since that's what we had on hand)

To start, preheat your oven to 350.

Boil 2 cups of water on the stove and add your rice.  Cook per directions on the box .

 While your oven is preheating, and rice is cooking, start browning your burger.


After a couple min's toss in your garlic and vegetables.

Tip on chopping Green Pepper -  
Cut out the top of the pepper, around the stem and then pull up to remove the seeds.

If you wish, you can remove the stragglers with your fingers or a spoon

Slice in half for a stable surface, and chop/dice as you normally would any vegetable. 
Once your burger and vegetables are cooked through, add your rice, sauce, 3/4c. of cheese, and  stir to combine.


 Once combined, spray a 2qt. casserole dish and pour in mixture.

Looks good already!

Now top with remaining cheese.

Bake for 25-30 min's.  Let cool for 10-15 min's (it's flaming hot!!) and Enjoy!

I'm no food photographer, but I assure you, this is one of the best new casserole recipes I have tried in awhile!

  1. Awwww thanks for the shout out & review girl! I am glad that you liked it! We love this recipe as well & I am like you about the whole green pepper saying! I was the same way! I like green peppers in other things & its kinda silly but for some reason the stuffed peppers are NO WHERES close to being as good UNSTUFFED!(: Come back anytime girl!
