Breakfast Pizza

I was a little leery of this recipe after our friend told us about it, but after he raved and raved about it, how could I not try it?!  Something about the sound of eggs and gravy didn't do much for me, but I'll tell you what...This stuff is GooooooD! 

Surprisingly, what we had leftovers we did have heated up rather well too.  Which I'll be honest...microwaved eggs and gravy didn't sound that appealing either...but just go with it.  This recipe is sure not to disappoint!

You'll Need:
1 pizza crust (we used the package add water and oil kind, my friend used the canned kind)
1 tube of sausage
4 eggs
2 cups White Gravy
About a cup of cheese
Shredded Cheese (We used mozzarella)
Salt/Pepper/Additonal Seasonings if desired

Preheat your oven to 400.
Prepare your pizza crust and place it on a greased cookie sheet or 13x9 pan.  You want the crust to be somewhat thin.  Cook the crust per the directions of your container.  Mine was a medium thick crust, so we cooked for 10 min's.

While your crust is cooking, prepare your meat topping.  Drain fat.

Take your pizza crust out of the oven.  Top with drained sausage and sit aside.

In a small bowl, whisk your 4 eggs with seasonings together, and pour over the sausage.

Top with warm gravy.  I had leftovers from our Biscuits and Gravy, so it was perfect!  I don't think there's a true measurement here.  Just enough to cover the entire surface evenly.  I'd say about 1.5 cups.

Same for cheese.  Top the gravy with shredded cheese. Approximately 1 cup.

Place pizza back into the oven to finish cooking.  Since we had a medium thick crust, ours took 15-18 minutes.  If you use thin crust, it will take 10-12 minutes.  All depends on what kind of crust you like.

Once the eggs are fully cooked through, remove your pizza, and sit for 5-10 minutes and serve.

Christmas Morning Skewers


There is something so beautiful about Christmas morning, isn't there?!  The whole house is filled with joy and laughter, and who wants to fuss over making breakfast. 

I've come up with a solution that is not only a well rounded meal (for Christmas morning anyway), but it only takes about 15 minutes from oven to table.  Nice!

Homemade Biscuits & Gravy

Did you just salivate? LOL! It's ok; We're all friends here. ;)

This is one of my all time asked for recipes from my friends and family alike.

I've said it before, and I'll say it again...Pay attention when you're in the kitchen! You never know when that "secret" family recipe is being passed down!

Now, I have known how to make biscuits and gravy for....well...a long time now.  Probably since I was 8 or 9, watching my Grandma in her kitchen.  Now...don't go get all crazy...  This is my own recipe from what I've learned from her over the years.  Which is a great thing!  It has at least half the fat, but still has all the delicious, creamy, taste bud pleasing, goodness you'd expect from Grandma's Gravy!
Looks just like Grandma's.  Don't forget the extra pepper!

So let's get started!!!

You'll Need:
1# of your favorite sausage
4 cups of whole or 2% milk
3-4 Tbsp of Flour
Salt/Pepper
A whisk, skillet, patience, and a strong arm ;)

Brown your sausage like you normally would, chopping it into some crumbles as you go.
After it's cooked, drain the fat.
Add back to your skillet, and with a regular ol' tablespoon from your silverware drawer, measure out 3 heaping tablespoons of flour.
Adding one at a time, to your sausage, mixing well in between scoops.
With your skillet (now on medium-med high heat),  SLOWLY add in your milk. 
I season the gravy as I go.  It can lump quickly, so never ever walk away.
If you're baking biscuits, now is a good time to pop those in.  Then everything will all be ready and piping hot!
Continue to stir the gravy continuously until nice and thick.
FYI:  This make a ton of gravy, but it re-heats beautifully.  A nice tip for those leftovers - Add a splash of milk and stir before microwaving.  Continue to add milk (little by little) until its the consistency you like.

Starbucks (Smarbucksty) "Skinny" Pumpkin Spice Latte - Copycat

This recipe is legit.  Skinny or not!

Let me just start by saying, I'm not a coffee drinker, but something about hearing Pumpkin Spice Latte, a million and one times a day, got me thinkin'..."This stuff must be really good", and WOAH baby...it is!


With my new found latte love, a whisk, and some determination, I started mixing around in my kitchen to see if I could mimic these tasty little treats.  Well, I tell you what...I came pretty close, but something about mine still wasn't quite right.  It was still drinkable, but didn't have that rich factor to it, that made the drink, THE DRINK.  Um-Kay...


So I turned to the internet to see what was out there.  Believe it or not, there are TONS of these recipes, but of the ones I tried, this one's the keeper!

By the way, if any of you are wondering, what I was missing? It was Half n' Half & Brown Sugar.  Doh!  Milk does a pretty good job alone, but the half n' half really brings a yumminess factor it!

If you have a pumpkin spice latte addiction too;

You'll Need:
(XL recipe) 
A very tall coffee cup or glass
1c. milk (any %)
2 tsp. of canned pumpkin puree
1 tsp. of brown sugar
1/2 tsp. pumpkin pie spice (I prefer just shy of 1/2tsp)
2 tsp. vanilla extract
2c. very strong coffee (the stronger the better)
4Tbsp. Half n' Half
2 tsp. white sugar
whipped cream for topping

To get started, you'll begin my making your pumpkin milk.  You'll need a microwaveable measuring cup.  Measure your milk, pumpkin, brown sugar, vanilla, and pumpkin spice, then microwave for 2 minutes.  As RecipeGirl stated in her directions, you'll want to make sure to remove it when the milk is hot & frothy.  Pour your pumpkin milk into a tall cup, then add hot coffee, then cream. Add white sugar, stir, and taste. Add more sugar, if desired. I REALLY loved mine with 3tsp. of white sug!!

Top your homemade latte with whipped cream, and celebrate that you can have Pumpkin Latte's Year Round! *Happy Dance, Happy Dance*
By the way - Another fantastic tip that RecipeGirl provided, is how to make your own pumpkin spice if its not readily available in your area. She says to "mix equal parts of cinnamon, ginger, allspice and nutmeg- and measure from there."  Genius, I tell you.  Genius!

Kid Approved Egg Pizza!

Do you have a hard time getting your child to eat breakfast in the morning?  If so, these Egg Pizza's are sure you become a winner in your household!  Mom's Happy.  Kids are Happy.  I love when it all comes together like that!

To start;

You'll Need:
2 eggs
veggies of choice *Optional
salt
half n' half or milk
ham (or other meat) *Optional
Shredded Cheese

To begin, crack your eggs, add salt, and a splash of milk or half n' half, like you normally would for scrambled eggs.
 Whisk together, pour into skillet that has been warmed on Medium heat, and add your vegetables.  We just added scallions.
 Top with ham to cover the surface.
 Allow the eggs to cook until set.  See below, how I can easily grab the egg with my spatula?
 Flip to cook on opposite side for just a minute.  Doesn't take long.  Then cut into "pizza's" with a pizza cutter and serve with fruit and/or yogurt. 
They'll gobble it up!

Banana Streusel Bread

This recipe can be made into just regular banana bread, or for a more special occasion, into a Streusel.  Mmm!

Look at that gorgeous swirl!
 


You'll Need:
1/2c. margarine
1c. granulated sugar
1 tsp. vanilla
2c. flour
1 tsp. baking powder
1/8 tsp. salt
3 medium sized banana's (about 1c)

For streusel:
1/4 - 1/2c. brown sugar
1 Tbsp. Flour


In a mixer, mix margarine and sugar.  Add eggs in, one at a time.  Add vanilla and combine.

In a separate bowl add your dry ingredients.  Flour, baking powder, salt, and soda.  Wisk together. In 3rd's, add the dry ingredients to the mixer.  Making sure to mix well each time, then scrap the sides before adding the next batch of dry ingredients. 

Smash your banana's in a bowl.  (I just use a fork.)

Add banana's to your mixer and stir to combine.
 

Pour the finished mix into a greased and lightly floured 8x8 pan.


*For streusel:

In a bowl combine brown sugar and flour.  Mix.


Top your banana bread with the mixture and with a knife swirl it in.  Just like you would coffee cake.


Bake for 30-35 min's.   If you decide to use a loaf pan, simply cook at the same temp for 1 hr.
